Tis The Season to Fight The Flu

The Holiday season is always filled with such cheer and happiness but while we’re traveling to see our loved ones this precious time could also result in sniffles and body aches. It’s extremely important to boost your immune system before traveling and during the holiday festivities to prevent the flu. This Ginger and Garlic soup is packed with anti-inflammatory vitamins and nutrients to keep you in good shape.

Combined, these superfoods are sure to pack a flavorful and beneficial punch of health. Make this soup and quickly alleviate symptoms of the common cold, flu, and sinus and respiratory infections. This recipe is a full meal or it can be modified to be more broth-y.

Ingredients:

• 3 tablespoons extra virgin olive oil

• 4 green onions, finely sliced

• 50g of grated root ginger

• 2 cloves of garlic, peeled and finely diced

• 7 cups of chicken broth or stock (or vegetable stock for vegans)

• 1 finely diced medium-hot chili pepper

• 2 medium sized carrots

• 2 stalks of celery

• 1 cup of sliced mushrooms

• ½ cup of cooked quinoa

• 1 shredded chicken breast (optional); season with salt, pepper, oregano

Method:

1. Cook the quinoa in a small pot and set aside.

2. Sauté onions, garlic, ginger, celery in EVOO in a large pot on low heat for 4 minutes.

3. Add the chicken/vegetable stock and seasoned chicken breast, boil for 10 min. If you aren’t adding chicken, only boil for 5 minutes.

4. Add quinoa and mushrooms; reduce heat to low; simmer for 20 minutes.

5. Add chopped chili pepper and simmer for additional 5 minutes.

6. Serve with a piece of French baguette.

If you are vegan, ditch the chicken and add some black or white beans for an extra hearty variation! No matter the modifications, the ginger and garlic will enrich your soul and immune system. Enjoy!
